Tomato, Strawberry & Mozzarella Salad
TOMATO | STRAWBERRY | MOZZARELLA | PESTO
I had a perfect Sunday afternoon with my friend, Jessie, strolling through downtown Providence, RI to visit The Providence Flea Market and then going to one of Fresh Farm RI's farmers markets in Pawtucket at Slater Park. At the flea market I got to check out Amadeus Magazine - an awesome "arts and culture magazine showcasing some of the most badass individuals around". It's definitely worth a look.
The farmers market had beautiful tomatoes from Oakdale Farms that I couldn't resist having for lunch. My family use to have a food co-op with them. They're produce is always fresh and delicious. Since its summer, I decided pairing their tomatoes with bright red strawberries and home-made balsamic pesto made with basil from the garden. Needless to say there weren't left overs. All the reason to go back next weekend for more!
The amount of salad you make is up to you. I just halved a bunch of tomatoes and slices some strawberries. I got mozzarella mini balls from the deli, so I just halved them to add in. I put all the tomatoes, strawberries & mozzarella on a plate (or bowl) and topped with a few pieces of basil.
For the pesto - add all the ingredients into a food processor and chopped it until it is smooth. If it is too think you may need to add extra oil (olive is fine). When it is finished, spoon it onto the salad.

Tomatoes (color doesn't matter - just makes it fun!)
Basil (to top)
1/4 cup fresh basil
1/8 cup walnut oil
1 tbsp dried basil
1/8 cup walnuts
1/4 parmesean cheese
1 tsp minced garlic
1/8 cup balsamic vinegar
extra oil if needed
