Guacamole Sriracha Soft Boiled Eggs




I woke up late the other morning and didn't know if i wanted lunch or breakfast... so I brunched. Eggs and avocados are two foods I probably eat too much of but I can't help myself.  In my kitchen guac is never extra.. its encouraged. So, I made my quick and easy guacamole and soft boiled some eggs to go on top. I almost always put sriracha on my eggs so I couldn't resist adding some to this. It was perfect if i do say so myself.

You know your meal was good when you're sad the plate is empty. This is definitely something ill be making a lot more! Maybe next time on a slice of pumpernickel toast?!!!

I just made a very quick guacamole for this breakfast. The amount of tomato, onion, and salt & pepper is up to you and depending on how much avocado you have. Dice the tomato and onion. In a medium bowl put avocado, tomato and onion. Squeeze half a lime. Mash with a fork and add salt & pepper to taste. 
In a medium pot add two eggs and cover with water. Turn on medium-high heat. When the water begins to boil turn off heat and cover pot. Let sit for 2 minutes while the eggs finish cooking. Peel eggs in a bowl of ice water. This helps give you a smooth peel so you don't break the eggs. Cut eggs in half. 
On a plate, spoon your guacamole and place halved eggs on top. Add sriracha if you like things a little spicy! Enjoy.
