Stacked Veggie Burger
I assembled this crazy, big veggie burger and wanted to share all the components with you. If you have all the ingredients on hand, or even switch it up with some of your own additions, you are in for one of the most satisfying veggie burgers that is so simple and quick to assemble. I added my own homemade hummus - the recipe is posted below - and topped it with ALL the goods.
2 slices Ezekiel Sprouted bread
1 slice cheese (I used Colby Jack)
2 slices tomato
sliced red cabbage
Sun-dried Tomato Hummus (recipe below)
1 veggie burger (see my favorite recipes and brands below)
Primal Kitchen Ranch Dressing
Toast bread and prep all ingredients. Cook veggie burger per directions in recipe or on label (see below). Assemble all ingredients onto the toasted bread - I layers mine from bottom to top with hummus, veggie burger, cheese, tomato, avocado, red cabbage, and ranch.
Sun-dried Tomato Hummus
1 tbsp minced garlic (1-2 cloves)
1 (15-ounce) can chickpeas, drained and rinsed
3 tbsp water
3 tbsp tahini
2 tbsp oil-packed, sun-dried tomatoes
olive oil, 1-2 tbsp if needed
1/2 tsp salt, to taste
Add all ingredients to food processor and blend until smooth.
Note: I use Tahini and Sun-dried Tomatoes from Trader Joes.
