Sriracha Cauliflower "Wings" w/ Lemon, Garlic, Yogurt Dip

It's game day! Since I am from New England and the Patriots are out of the Super Bowl, I am probably more excited for the Puppy Bowl than I am for the actually game. But regardless of the game, I am ALWAYS excited for game day snacks.

Cauliflower was the vegetable of 2015 - whether it was cauliflower crusted pizza, cauliflower rice, or cauliflower wings, everyone was using cauliflower as their "replacement carb" of choice (I would say zucchini was a close second with the whole "zinguini" phase). My personal favorite from all of the cauliflower recipes was using them as "wings". Sometimes I am seriously craving buffalo or barbecue but I don't want to feel like crap after eating fried wings. This is the perfect substitute. And the perfect game day snack!

Preheat oven to 400 degrees F. Lay parchment paper on a cookie sheet.

Cut florets off head of cauliflower and rinse. Beat eggs in a bowl. Put breadcrumbs in a separate bowl. Dip cauliflower florets in in egg and then the breadcrumbs - make sure they are coated fully. Place on the cookie sheet and repeat with the rest of the florets. Bake for 20-25 minutes.

While it is baking, whisk together the sriracha, buffalo, and butter. When the cauliflower is done, toss in the sauce. Put back in the over for 5-7 minutes.

Mix all of the ingredients for the dip. Serve with the "wings" when they are finished in the oven.

For the vegans: Replace the egg with coconut milk and use vegan butter. I haven't tried any replacement for the yogurt but I am sure a coconut yogurt would be good!

1 head cauliflower
2 eggs
1 cup breadcrumbs
1/4 cup Frank's buffalo sauce
1/4 cup Sriracha
4 Tbsp. butter

Lemon, Garlic Yogurt Dip:

1/2 lemon
1/4 tsp crushed garlic
1/2 cup yogurt
