3 Ingredient Peanut Butter Cookies

Are you ever craving something sweet but don't want to feel crappy about yourself for indulging? Personally, I feel this way almost every single day. These super easy, 3 ingredient peanut butter cookies are the perfect treat. Yes, just 3 ingredients: peanut butter, coconut sugar, and an egg! They curb that craving and don't make you feel bad about it. They only take 20 minutes to make and come out of the oven perfectly soft and crumbly. No pressure.. but I'd give these cookies a try ASAP!

Recently, I started using more natural forms of sugar to sweeten things. Coconut sugar has been a new add to my pantry. So far, I have had no issues replacing it for regular sugar in baking recipes. I used Big Tree Farms Organic Coconut Sugar (blonde) for this recipe. What I love about coconut sugar is that it is naturally nutrient rich. It has a lower glycemic index compared to regular sugar which means it absorbs into your blood stream at a slower rate. This way you don't have that crazy sugar high and then crash shortly after. INGREDIeNTS

1/2 cup coconut sugar
1 cup smooth peanut butter
1 large egg

Recipe

Preheat oven to 350 degrees. In a medium bowl, mix all three ingredients together. On a cookie tray lined with parchment paper, roll out 12 equal size balls. Make sure they are smooth and perfectly round. Gently press the top of each ball to make a flat top. Do not press too hard - just enough to flatten the top a little bit. With a fork, make two perpendicular fork impressions in the dough (as shown above). Place in the oven for 12-15 minutes. You want to make sure the cookies are cooked all the way through without letting them get too crispy. 

Enjoy with a glass of almond milk, or regular milk, or just by themselves! They last for a few days in an airtight container. I recommend popping in the microwave for about 15 seconds to reheat. Now you have a perfect sweet treat that you don't have to feel guilty indulging in!
