Mint Chip Smoothie Bowl
Getting ready for St. Patty's Day with this Mint Chip Smoothie Bowl featuring my favorite plant-based Vanilla Protein Powder from ALOHA. This is one of the best smoothie bowls I've made recently - so creamy with that natural mint flavor. I always get questions about whether you can taste the vegetables that I add to my smoothies. Making a smoothie is all about finding a balance between the flavors while producing a creamy, smooth consistency. I find that adding zucchini gives me the thick creaminess I want without adding excess banana (or other high sugar fruits). Another vegetable to add that has minimal flavor is cauliflower. Buying organic zucchini, washing, dicing (slice into rings and then quarter), and putting in a freezer bag is my favorite way to stalk up on frozen zucchini. For cauliflower, I buy pre-washed and frozen cauliflower from Whole Foods. I have never tasted the veggies in any of my smoothies and would love to get your opinions about it after trying this recipe.
1 cup almond milk (or other non-daily milk)
1 scoop ALOHA Vanilla Protein Powder
¼ cup raw cashews
1 frozen banana
1 cup frozen zucchini
¼ cup fresh mint
1 tbsp cacao nibs, plus more for toppings
Unsweetened coconut flakes
Add everything except the coconut flakes and cacao nibs to a high-speed blender. Blend on high until smooth. Add 1 tbsp cacao nibs to blender and blend for another 15 seconds. Pour smoothie into a bowl and add cacao nibs and coconut flakes on top.
