Grapefruit, Mango & Avocado Salad


There is nothing fresher to me than a summer salad. Mixing something sweet, like a ripe mango, and something (a tad) sour, like a ruby red grapefruit, is the perfect combination on a hot summer day. 

If you ever have a cook out, or you grill dinner one night, this is the perfect "next day meal". I made a few extra pieces of chicken on the grill when I was cooking last night so I would have extra for lunch throughout the week.

Instead of buying grapefruit in a jar that is (usually) sitting in extra sugar, I peel my own. This process is tedious but it is so worth it. Its great to do while watching TV - its a mindless activity and you can snack  along the way!


Peeled Grapefruit
Grilled Chicken
Lettuce (I used a spring mix)
Shredded Almonds

1/4 cup oil (I used walnut, but anything is good)
1/2 grapefruit squeezed (just the juice)
1 tsp honey
salt and pepper to taste

Assembling the salad is up to you along with the size of the salad. I usually try to make things look nice, but sometimes I am so hungry I just throw everything in a bowl to speed up the process! 

To make the vinaigrette - if you already peeled all of the grapefruit segments (which I usually do), you can press a bunch of the segments with a fork in a bowl to make the grapefruit juice. Make sure the remove any left of press peel and seeds from the juice. Add the oil, grapefruit juice, honey, and salt & pepper together and mix well with a fork or whisk. You want to make sure the citrus breaks up the oil. Any excess dressing can be stored in the refrigerator - make sure you shake it or whisk it before you use it again!
