Chicken(less) Tikka Masala Soup

You know when it's so cold outside that when you take even one breath it feels like there are icicles in your sinus'? Well that's how I felt this weekend, so all I wanted was a hot bowl of soup.

There is an India restaurant near my house that I pass by on my walk to and from Trader Joe's. Today, the smell of curry motivated me to get what I needed to make Tikka Masala Soup. I eat mostly a plant based diet and try to stay away from processed food, but I was curious to try Trader Joe's Chicken-less Strips in the soup. The reviews I saw for them said they were very bland, but I tried them anyway. I am glad I did because they were perfect for this recipe (you can always substitute real chicken).


1 Tbsp. coconut oil
1/2 diced sweet onion
1 Tbsp. minced garlic
1/2 Tbsp. garam masala
1 tsp. ground ginger
1/2 tsp. cumin
1/2 tsp. turmeric
1/2 tsp. cinnamon
1 cup vegetable stock
1 can diced tomatoes
1 cup coconut cream
1 box Trader Joe's Chicken-less Strips (or 1 lb. chicken cooked and shredded)
salt + pepper


In a large soup pot, heat coconut oil on medium heat. Saute onions for 3-4 minutes until they start to become translucent. Stir in garlic and let sit for another 3 minutes (making sure nothing burns). Add garam masala, ginger, cumin, turmeric, and cinnamon. Saute for 3 more minutes .
Add vegetable stock, tomatoes, and coconut cream to the pot. Stir together while it all comes up to temperature. While this is heating up, in a medium skillet heat the chicken-less strips. Remove soup from heat. Using an immersion blender, blend soup until smooth and creamy. Add chicken-less strips and add salt + pepper to taste. Enjoy!
