Maple Cinnamon Almond Milk Waffles

Growing up, my dad use to make my brother and I pancakes or waffles every weekend. He had a shirt that we called his 'pancake shirt'. It was a maroon L.L.Bean plaid flannel - I am not sure why we decided that was going to be dad's pancaking making shirt, but it was. My dad hung this shirt in the coat closet near the kitchen and every weekend, my brother and I would run into the kitchen, dad would put on his pancake shirt and we would all make pancakes or waffles from scratch.

Butternut Squash, Spinach, and Ricotta Stuffed Shells

Last week, I made these incredible sweet potato gnocchi (recipe coming soon) and had some left over ricotta that I did not know what to do with. I also had a butternut squash sitting around that I had to use. I never have ricotta, but I sure am glad I did this week because these butternut squash stuffed shells were amazing. To be completely honest, I have never made stuffed shells before. I grew up in an Italian house, so grandma would sometimes make them but I hadn't had them in years. For a first time stuffed shell maker, these were super easy and totally worth the slight mess I made trying to stuff the shells... they were so slippery!

The first time I saw someone make almond milk was a few years ago - you might think its crazy that I remember this. There was an old episode of Keeping Up With the Kardashians on TV and Leah Jenner (as in Kendall/Kylie's half brother's wife) was making almond milk in the kitchen while some drama filled conversation took place. I know, this is super random. But I have also thought Leah was so cool and I loved (what I could see) of her lifestyle. From then on, I knew I wanted to give homemade almond milk a try. Fast forward a few years and I'm obsessed.

Roasted Brussel Sprouts and Pears

I have been making this recipe for over 8 years now and have never gotten sick of it. My mom and I wanted a new brussel sprout dish for Thanksgiving (circa 2008) and this is what we came up with. The pears add a nice sweet touch and are perfectly balanced out by the brussel sprouts. This dish is always a crowd favorite, not only on Thanksgiving but all year round.
